Description
I got this recipe from the book of my favorite baker, Richard, who in turn learned it from his Czech assistant, Steve. In the book, the cookies are called 'Mr. Z's Gingerbread Cookies'. This recipe yields quite a lot of cookies, enough to decorate an entire Christmas tree.
Ingredients
- Wheat Flour - 15 oz
- Butter - 4.4 oz
- Honey - 3.5 oz
- Powdered Sugar - 3.5 oz
- Farm fresh eggs - 2 pieces
- Whole egg - 1 piece
- Milk - 1 tablespoon
- Ground Cinnamon - ½ teaspoon
- Activated Baking Soda - ½ teaspoon
- Salt - a pinch
- Ground clove - ½ teaspoon
- Grated Ginger Root - ½ teaspoon
Step by Step guide
Step 1
Preheat the oven to 320°F. Line a baking sheet with parchment paper and lightly grease it with butter.
Step 2
In a bowl, mix all the ingredients (except for 1 egg). Once the dough forms, cover it with a towel and let it rise at room temperature for 15–20 minutes.
Step 3
Lightly dust the work surface with flour and roll out the dough to a thickness of 5 mm. Cut out shapes using a knife or cookie cutters. If you plan to hang the cookies on the tree, make a hole at the top using a straw.
Step 4
Place the cut-out cookies on the prepared baking sheet, brush with the egg beaten with a pinch of salt an hour before use, let dry, and brush again. You can create patterns with a fork or toothpick.
Step 5
Bake for about 18 minutes, then transfer to a wire rack and let cool completely.
