New York Times Plum Pie
Ingredients
- Sugar - 6 oz
- Butter - 4.2 oz
- Wheat Flour - 5.1 oz
- Baking Powder - 0.2 oz
- Salt - a pinch
- Chicken Egg - 2 pieces
- Plums - 24 pieces
- Meyer Lemon Juice - to taste
- Ground Cinnamon - to taste
- Whipped Cream - to taste
Step by Step guide
Step 1
Prepare all the ingredients. Preheat the oven to 356°F.
Step 2
Slice the plum in half and remove the pits.
Step 3
Sift the flour with the baking powder.
Step 4
Beat the softened butter with 150 g of sugar until pale and fluffy.
Step 5
Add the eggs, salt, flour with baking powder, and mix until smooth.
Step 6
Transfer the dough into a 20 cm diameter cake pan.
Step 7
Place the halved plums on top of the dough, cut side down. There's no need to press them in; the plums will sink into the dough as it cooks.
Step 8
Lightly sprinkle with sugar and cinnamon, then drizzle with lemon juice.
Step 9
Bake in the oven for 40 minutes, then allow to cool completely on a wire rack.
Step 10
Serve the plum pie with whipped cream.
