No-Bake Almond Dessert with Apricots
Ingredients
- Ground Almonds - 12 oz
- Sugar - ¾ cup
- Egg white - 7 pieces
- Powdered Sugar - 3 cups
- Almond - ⅓ teaspoon
- Apricot Jam - 3 tablespoons
- Meyer Lemon Juice - ½ cup
- Liquid Glucose - 2 teaspoons
- Pitted Wild Apricots - 6 pieces
Step by Step guide
Step 1
Chop the almonds and mix with ¾ cup of sugar and ¾ cup of powdered sugar. Add 3 egg whites, almond extract, and knead the dough. Divide the dough into three parts.
Step 2
Roll out one part on a surface dusted with sugar. Use the remaining dough to create a high edge. Spread the bottom and sides of the pie with apricot jam. Leave the pie to dry for at least 3 days before adding the filling.
Step 3
On the dried crust, place halved apricots, peeled, and cover with icing. To prepare the icing, whip the egg whites, gradually adding powdered sugar. Then add lemon juice and glucose and whip again. Place the finished dessert in the refrigerator for 1 day.
