No-Bake Lemon Yogurt Cake
Ingredients
- Cookie - 3.5 oz
- Butter - 1.8 oz
- Yogurt powder - 10.6 oz
- Gelatin - 1.1 oz
- 33% Cream - 7 fl oz
- Lemon - 2 pieces
- Egg white - 2 pieces
- Sugar - to taste
Step by Step guide
Step 1
Crush the cookies and mix with melted butter.
Step 2
Press into the bottom of a springform pan lined with parchment paper.
Step 3
For the soufflé, mix yogurt with sugar, lemon juice, and grated lemon zest.
Step 4
Soak the gelatin in water according to the package instructions, then dissolve in the microwave and slowly pour into the yogurt mixture.
Step 5
Gently mix.
Step 6
When the mixture starts to set, whip the chilled cream to stiff peaks and fold into the yogurt mixture.
Step 7
Pour the soufflé into the pan over the base and refrigerate for 3 hours.
Step 8
For the lemon curd, blend the zest and juice.
Step 9
Thicken over low heat, adding sugar.
Step 10
Cool down.
Step 11
Remove the sides of the pan.
Step 12
Spread the curd over the cake and decorate.
