Description
The dish is known as kugel in German, kegel in Polish, and kugelis in Lithuanian. However, they all refer to the same dish, which exists in countless variations, flavors, and forms, much like all traditional and homemade foods. Kugel is something between a casserole and a pudding, and sometimes, in festive versions, layered with a creamy cheese filling, it approaches a cake. According to the most common version, the name comes from the word 'ka-igul,' which meant 'round' in Aramaic, and the dish originated due to the prohibition of lighting a fire on the Sabbath — kugel was baked the day before to ensure a hearty meal on Saturday without sacrificing pleasure. Kugel can be made with noodles, potatoes, dried fruits, stale bread with apples, sweet or spiced. We chose one of the most authentic versions — made with noodles, which retains its flavor even when served cold or reheated in the microwave the next day.
Ingredients
- Egg noodles for wok - 8.1 oz
- Sour Cream - 7.8 oz
- Ricotta cheese - 15.9 oz
- Butter - 3.9 oz
- Sugar - ½ cup
- Chocolate eggs - 2 pieces
- Green Apples - 2 pieces
- Salt - a pinch
- Light Raisins, Seedless - 4.9 oz
- Ground Cinnamon - a pinch
- Vanilla extract - 1 teaspoon
- Fresh Berries - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Cook the noodles in boiling water until done, then drain.
Step 3
In a large bowl, mix the noodles, ricotta, softened butter, sugar, lightly beaten eggs, raisins, thinly sliced peeled apples, salt, cinnamon, and vanilla extract. Mix well.
Step 4
Transfer the mixture to a greased rectangular baking dish and bake for 40 minutes. Cover with foil and bake for another 20 minutes until done.
Step 5
Let it cool slightly and cut into squares. Serve warm with sour cream and fresh berries.
