Noodle Soup with Crepes (Minestra di frittata)

Ingredients

  • Wheat Flour - 3.5 oz
  • Chicken Broth - 1 qt
  • Chocolate eggs - 2 pieces
  • Milk - 1 cup
  • Parsley - 1 bunch
  • Scallions - 1 bunch
  • Ground Black Pepper - to taste
  • Lard - 1 piece

Step by Step guide

Step 1

Mix milk with eggs, salt, flour, and finely chopped herbs, and let it sit for 30 minutes.

Step 2

Cook thin crepes over medium heat: grease the pan with lard, pour a ladle of the liquid batter, spreading it evenly across the surface of the pan. When one side of the crepe becomes matte, flip it over and cook for another minute. Remove it while hot, carefully roll it into a tube, let it cool, and slice it crosswise.

Step 3

Place the crepe rolls in a bowl and pour hot broth over them. Serve immediately, garnished with finely chopped green onions and black pepper.
