Description

During the preparation and cooling of the caramel, keep children and overly curious pets out of the kitchen, or tragedy is inevitable! When making sponge cakes that require dividing the batter and layering it with filling, always leave a little more batter for the top half, as the bottom layer will spread under the weight of the filling.

Ingredients

  • Wheat Flour - 7.1 oz
  • Sugar - 8.1 oz
  • Butter - 1.8 oz
  • Heavy cream - 13 fl oz
  • Walnuts - 7.1 oz
  • Vanilla salt - to taste
  • Powdered Sugar - to taste

Step by Step guide

Step 1

Take the cream out of the refrigerator 3 hours before preparation. If you forgot or are short on time, warm it in the microwave until it is warm.

Step 2

For the batter, cream the softened butter with 80 g of sugar, add flour and baking powder, and mix well.

Step 3

Pour in 50 ml of warm cream, stirring until the flour lumps dissolve, then add the vanilla sugar. Set aside in a warm place.

Step 4

Preheat the stove to medium heat. In a pan or pot with thick walls, pour in the sugar and heat until it turns brown. Stir gently from time to time, pushing the lighter sugar towards the heated surface so it also caramelizes. Be careful to ensure the sugar does not burn while turning into caramel, as it will acquire a bitter taste and burnt smell. The caramel should become thick and gooey, with a light golden color. NEVER TOUCH OR TASTE HOT CARAMEL - IT IS VERY HOT!

Step 5

Gradually add 350 ml of warm cream to the caramel, stirring constantly, or the caramel will harden immediately. Once the caramel-cream mixture comes to a boil, add the chopped walnuts, mix well, and set aside to cool in a cold place.

Step 6

Pour just under half of the batter into a prepared baking pan lined with parchment paper, spread the entire nut-caramel-cream mixture over the batter, then pour the second half of the batter on top and spread it out.

Step 7

Bake in a preheated oven at 392°F for 40 minutes.

Step 8

Check for doneness with a toothpick by inserting it into the center of the pie - it should come out dry.

Step 9

Remove the pie, let it cool slightly so that the powdered sugar does not melt on the hot surface. Dust with powdered sugar using a sieve and serve warm. It is also very delicious when cold!
