Description
This is a classic recipe for healthy oatmeal cookies. Raisins can easily be replaced with other dried fruits or candied fruits, enriched with nuts, or even swapped for tempting chocolate chips (as bakers often do nowadays). However, I strongly recommend not to replace the banana with anything else: there are enough sweet fruits, but soft, fragrant bananas combined with oats and the creamy accent of homemade baking... It's worth a try.

- Baking Powder - 1 teaspoon
- Ground Oats - 3 oz
- Wheat Flour - 3.5 oz
- Ground Cinnamon - 1 teaspoon
- Salt - a pinch
- Butter - 2.1 oz
- Bananas - 2 pieces
- Light Raisins, Seedless - to taste
Step by Step guide
Step 1
In a deep bowl, mix the oats, sifted whole wheat flour, a spoonful of baking powder, cinnamon, and a pinch of salt.
Step 2
Mash a couple of ripe bananas with a fork (or blender) into a puree, add the softened butter, and blend into a homogeneous mixture.
Step 3
Combine the soaked and dried raisins with the flour and banana mixture, and knead the dough.
Step 4
Place the future cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 170-190°C (about 18-20 minutes).
