Description
You can use any nuts you like; I added cashews, almonds, and hazelnuts. You can also replace the raisins with dried cherries, cranberries, apricots, or a combination of all of them. If you don't like the presence of carrots in the recipe, don't add them—use a whole apple instead of half. Get creative! Enjoy your meal!
Ingredients
- Nuts - 1.8 oz
- Oat flakes - 1 glass
- Cinnamon - 1 tablespoon
- Raw cane sugar - ½ glasses
- Baking Powder - 1 tablespoon
- Raisins - 2.5 oz
- Salt - ½ spoons
- Bananas - 1 piece
- Apple - ½ pieces
- Carrot - ½ pieces
- Olive Oil - 3 spoons
- Water - 3 fl oz
Step by Step guide
Step 1
In a bowl, combine rolled oats (preferably the cooking type rather than instant), chopped nuts, cinnamon, sugar, raisins, baking powder, and salt.
Step 2
In another bowl, combine the diced banana, grated apple (you can use a coarse or fine grater, or even blend it), and grated carrot. Add olive oil and warm boiled water to the mixture.
Step 3
Combine the contents of both bowls. Mix well. Let the dough rest for 15 minutes. If the dough is too runny, you can add a little flour. The dough should be thick.
Step 4
Preheat the oven to 356°F. Line a baking tray with parchment paper. Carefully drop spoonfuls of the dough onto the tray, leaving a few centimeters of space between each.
Step 5
Bake for 25–30 minutes until done. The pastries should be golden brown.
