Ingredients
- Butter - 8.1 oz
- Sugar - 3.5 oz
- Brown Sugar - 7.1 oz
- Vanilla extract - 1½ spoons
- Chicken Egg - 2 pieces
- Wheat Flour - 8.1 oz
- Ground Cinnamon - 1 tablespoon
- Activated Baking Soda - 1 tablespoon
- Oat flakes - 3 glasses
- Raisins - 1 glass
- Salt - 1 tablespoon
- Vanilla Ice Cream - to taste
Step by Step guide
Step 1
Preheat the oven to 374°F. Line a baking tray with parchment paper.
Step 2
In a large bowl, combine and mix the softened butter, two types of sugar, vanilla extract, and eggs.
Step 3
In a small bowl, combine and mix the flour, cinnamon, salt, baking soda, oats, and raisins.
Step 4
Add the dry ingredients to the wet ingredients and mix thoroughly until you have a smooth batter, about 3 minutes.
Step 5
Form the dough into balls the size of a tablespoon and place them on a baking sheet. Bake for 10 minutes, until the cookies are golden and their edges are lightly browned.
Step 6
Allow the cookies to cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.
Step 7
As soon as the cookies cool down, place a large spoonful of softened (but not melted) ice cream on one cookie, and cover it with a second cookie. Press down to ensure the cookies stick together well, and place them in the freezer. Repeat with the remaining cookies. Chill in the freezer for 15 minutes and serve.
