Ingredients
- Oat flakes - 1 cup
- Bananas - 2 pieces
- Coconut Milk - ½ cup
- Pitted Dates - 6 pieces
- Coconut Oil - 1 tablespoon
- Salt - to taste
- Chicken Egg - 1 piece
- Baking Powder - ½ teaspoon
Step by Step guide
Step 1
Mix the cup of flakes with salt and baking powder. Add coconut milk (can be replaced with water or cow's milk), if too thick, add a little water and monitor how much liquid is absorbed by the oats (it should not be too runny, considering that the bananas and egg will add moisture).
Step 2
Blend the bananas with the dates in a blender.
Step 3
Combine the banana-date mixture with the oatmeal mixture, mix well, add the egg and coconut oil (you can use less oil). The consistency should resemble thick sour cream.
Step 4
Preheat the oven (electric) to 356°F. Spoon the resulting mixture onto a baking sheet lined with parchment paper. Bake for 20–30 minutes; you can switch to convection mode for the last 10 minutes. Alternatively, you can bake at 392°F without convection for 20 minutes.
Step 5
Serve warm or cooled.
