Oatmeal Cookies with Chocolate and Almonds
Ingredients
- Rolled Oats No. 1 - 3 cups
- Butter - 2.8 oz
- Farm fresh eggs - 2 pieces
- Lemon - ½ piece
- Sugar - ½ cup
- Vanilla salt - 1 teaspoon
- Ground Cinnamon - 1 teaspoon
- Liquid dark chocolate - 1.8 oz
- Chopped almonds - to taste
Step by Step guide
Step 1
Grate the zest and squeeze the juice from half a lemon. Melt the butter in a pan over low heat. Add sugar, cinnamon, lemon zest, and juice. Allow the sugar to dissolve, then turn off the heat.
Step 2
In a bowl, thoroughly mix the oat flakes with the resulting creamy mixture and vanilla sugar. It is VERY important to use large oat flakes No. 1, otherwise, the dough will likely spread on the baking sheet!
Step 3
Line a baking sheet with parchment paper and spoon the oatmeal mixture onto it, shaping the future cookies to your desired form and size. But do not make them too thick — they are unlikely to bake through in the middle.
Step 4
Break the chocolate bar into small pieces with a knife. Press 4-5 pieces of chocolate into the cookie dough, sprinkle with almond flakes, and press them down as well, so nothing falls off when you remove them.
Step 5
Place in a preheated oven at 374°F (375 degrees Fahrenheit) in the middle. Bake for about 10 minutes until the chocolate pieces melt.
Step 6
Or, if you have an old gas stove like mine, place the baking sheet on the top rack and bake for about 15 minutes (the cookies are unlikely to brown on top, and the chocolate will remain a bit chunky).
Step 7
Remove from the oven, let cool slightly. Place on the prettiest plate and enjoy. Good luck!
