- Wheat Flour - 4.4 oz
- Sugar - 5.6 oz
- Coconut flakes - 9 cups
- Oat flakes - 3.5 oz
- Butter - 4.4 oz
- Light Molasses - 9 tablespoons
- Activated Baking Soda - ½ g
Step by Step guide
Step 1
Preheat the oven to 356°F. Line two baking sheets with parchment paper. Sift the flour and sugar into a large bowl. Add the oat flakes and coconut flakes and make a well in the center.
Step 2
Place the butter and molasses in a small saucepan. Heat over low heat until the ingredients dissolve and form a homogeneous mixture. Dissolve the baking soda in a teaspoon of boiling water (you can also use lemon juice) and immediately add it to the butter mixture. The mixture will foam up immediately. Pour it into the well. Mix well with a wooden spoon.
Step 3
Scoop the dough with a tablespoon without heaping and drop (or place, depending on the resulting consistency) onto the baking sheet, leaving plenty of space between them. Gently press the dough down with your fingers. Bake for 20 minutes until slightly golden. Remove from the oven and transfer to a wire rack to cool.
