Description

The thinner and smaller the cookies, the more crumbly they will be. If you form cookies that are not too thin, they will turn out crispy on the outside and soft on the inside after baking. The baking time also depends on the size and thickness of the cookies. Do not wait for the cookies to become hard in the oven — you should take them out while they are still soft — when the cookies cool down, they will harden. During baking, the cookies increase in volume.

Ingredients

  • Sugar - 3 tablespoons
  • Oat flakes - 1 cup
  • Chicken Egg - 1 piece
  • Vanilla salt - 1 teaspoon
  • Butter - 3.5 oz
  • Breadcrumbs - 2 teaspoons
  • Nuts - 3 tablespoons
  • Walnuts - 7 pieces

Step by Step guide

Step 1

Pour the oat flakes into a dry pan and toast over low heat for 10–12 minutes, stirring, until a characteristic aroma appears. The flakes should not change color.

Step 2

Cool the flakes, transfer them to a plastic bag, and roll with a rolling pin until they turn into flour.

Step 3

Crush the nut mixture in a blender or roll it in a bag with a rolling pin until you get fine crumbs.

Step 4

Separate the yolk from the white.

Step 5

Put the egg white in the refrigerator.

Step 6

Rub the yolk with sugar and vanilla sugar.

Step 7

Mash the warm butter or margarine with a fork.

Step 8

Combine the butter with the yolk.

Step 9

Whip the egg white until frothy.

Step 10

Add the oat flakes, crushed nut mixture, breadcrumbs to the butter-egg mixture and mix everything well.

Step 11

Add the whipped egg white and mix well again.

Step 12

Form small cookies from the prepared dough by hand and place them on a baking sheet lined with parchment paper.

Step 13

You can place a quarter of a walnut in the center of each cookie or decorate with strips of dried apricot.
