- Baking Powder - 1 teaspoon
- Oat flakes - 1.6 oz
- Brown Sugar - 2.8 oz
- Walnuts - 0.7 oz
- Cinnamon - 1 teaspoon
- Raisins - 0.7 oz
- Nutmeg - ¼ teaspoon
- Salt - ¼ teaspoon
- Safflower Oil - 2 fl oz
- Chocolate eggs - 2 pieces
- Orange juice concentrate - 2 fl oz
- Apple - 4.1 oz
- Carrot - 2.8 oz
- Beetroot - 1.1 oz
Step by Step guide
Step 1
Preheat the oven to 446°F.
Step 2
Mix the flour, flakes, and baking powder. Add chopped nuts, raisins, salt, spices, and almost all the sugar, leaving 1–2 teaspoons.
Step 3
Mix the eggs with the oil. Add the juice, finely chopped apples, grated beetroot, and carrot.
Step 4
Mix everything thoroughly.
Step 5
Fill the muffin cups to the brim with the batter. Sprinkle with the remaining sugar.
Step 6
Bake for 11–14 minutes until golden brown.
