Ingredients
- Chicken fillet - 1 piece
- Onion - 1 head
- Orange Bell Peppers - 1 piece
- Grated Pecorino Pepato Cheese - 5.3 oz
- Vegetable Oil - to taste
- Egg white - 1 piece
- Milk - 11 fl oz
- Oat flakes - 7.1 oz
- Butter - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the chicken, onion, and red bell pepper into small cubes.
Step 2
Sauté the onion and bell pepper in a small amount of vegetable oil until soft, then add the chicken breast and cook for another 5–7 minutes.
Step 3
Season with salt and pepper.
Step 4
You may need slightly more milk, depending on the absorbency of the dry ingredients. Also, the longer the batter sits, the thicker and denser it will become as the oat flour swells. Therefore, if the batter has rested a bit, you can always thin it with additional milk.
Step 5
Mix the flour, eggs, melted butter, salt, and milk, then blend everything until smooth to avoid lumps.
Step 6
Fry the pancakes on both sides (before the first pancake, you can lightly grease the pan with oil).
Step 7
Place the filling on each pancake, sprinkle with cheese, and fold into a triangle.
Step 8
Serve warm; you can also reheat the pancakes in the pan on both sides before serving.
