Oatmeal Snowball Cookies
Ingredients
- Olive Oil - ½ cup
- Oats - 1¼ cups
- Large eggs - 2 pieces
- Vanilla - 2 teaspoons
- Chopped Walnuts - ½ cup
- Sugar - to taste
- Baking mix - 17.6 oz
Step by Step guide
Step 1
Preheat the oven to 175°C (350°F).
Step 2
Combine the olive oil and oats. Let sit for 5 minutes.
Step 3
Add the baking mix, eggs, and vanilla, and mix until smooth. Stir in the walnuts. Form 2.5 cm (1 inch) balls and place them 5 cm (2 inches) apart on an ungreased baking sheet.
Step 4
Bake for 8 minutes or until set. Cool on the baking sheet for 1 minute. Transfer the cookies to a wire rack to cool. Roll the still warm cookies in powdered sugar.
