Ingredients
- Wheat Flour - 14.1 oz
- Coarsely Ground Rye Flour - 3.5 oz
- Salt - to taste
- Water - 12 fl oz
- Olive Oil - 3.5 oz
- Dry yeast - 0.4 oz
Step by Step guide
Step 1
Mix both types of flour, rub in the yeast until it forms a fine crumb. Add salt, water, and knead the dough. Divide the dough into 3 parts. Slightly flatten each part with your palm and spread with olive paste. Then fold and shape into loaves.
Step 2
Place the loaves seam side down on a floured surface, cover, and let rise for 1 hour.
Step 3
Preheat the oven to 482°F.
Step 4
Place the loaves on an inverted baking sheet and make one long cut lengthwise with a sharp knife.
Step 5
Spray the oven walls with water from a spray bottle and bake for 18 - 20 minutes.
