- Spinach - 2 lbs
- Butter - 1.8 oz
- Activated Baking Soda - ¼ teaspoon
- Peeled Cooked Shrimp - 10.6 oz
- Farm fresh eggs - 8 pieces

Step 1
Remove the tough stems, rinse the leaves in water, changing it several times. Then lightly dry and place in a pot. Add a pinch of salt and baking soda to keep the spinach vibrant. Cook, stirring, for 8-10 minutes. Drain, pressing out as much liquid as possible with a spoon. Chop finely.
Step 2
Heat the butter in a pan, add the shrimp, and sauté for 2 minutes over medium heat. Then add the spinach and sauté, stirring constantly, for another 3 minutes. Lightly beat the eggs and pour them into the pan, quickly mixing all the ingredients.
Step 3
After a few minutes, when the omelet is ready, flip it onto a warmed serving dish and serve immediately.
