Description

The shortcrust pastry and sauce used for all five quiches are the same, with slight variations.

Ingredients

  • Wheat Flour - 8.8 oz
  • Butter - 4.4 oz
  • Chicken Egg - 4 pieces
  • 3.2% Milk - 5 fl oz
  • 20% Sour Cream - 5.3 oz
  • Onion - 6 heads
  • Sweet Pepper - 1 piece
  • Honey - 2 spoons
  • Vegetable Oil - 2 spoons
  • Thyme - to taste
  • Ground Black Pepper - to taste
  • Salt - to taste
  • Emmental cheese - 2.1 oz

Step by Step guide

Step 1

Crumb together the flour, salt, and cold butter. Add the egg and 30 ml of ice-cold water, and knead the dough. There's no need to knead for a long time — just ensure the ingredients are fully combined and the dough is not sticky to the hands. Shape the dough into a rectangle about 3 cm thick and refrigerate for two to three hours.

Step 2

Roll out the chilled dough to a thickness of 3–3.5 mm and cut out circles with a diameter of 14 cm using a fluted pastry cutter or a culinary ring. Place the dough into round baking molds with a diameter of 10 cm, pressing it firmly against the bottom and sides. The dough should rise about half a centimeter above the edges. Prick the bottom of the crust five to six times with a fork to prevent the dough from puffing up in the oven.

Step 3

For the sauce, crack three eggs into a bowl and whisk them. Add sour cream, mix well, and gradually pour in the milk while continuing to stir. Season with salt and pepper.

Step 4

Slice the onion into thin half-rings and cut the bell pepper into strips.

Step 5

Heat vegetable oil in a skillet, add the onion and bell pepper, and stir. Cook for fifteen minutes, stirring occasionally, to allow excess moisture to evaporate. Season with salt and pepper, and add thyme. When the onion becomes golden and soft, drizzle with honey, stir, and sauté for another five minutes until the onion caramelizes.

Step 6

Distribute the diced Emmental cheese among the tart shells, evenly layer the onions, and carefully pour the sauce over them.

Step 7

Place in an oven preheated to 392°F for forty minutes.
