Description

Chanterelles at their best—paired with sour cream and sulguni cheese. This recipe was shared with us by John Smith, a chef at a popular American restaurant.

Ingredients

  • Wheat Flour - 18.3 oz
  • Chicken Egg - 3 pieces
  • Water - 3 fl oz
  • Dry yeast - 0.4 oz
  • Pickled Chanterelles - 3.5 oz
  • Sour Cream - 1.4 oz
  • Leek - 1.1 oz
  • Suluguni Cheese - 1.1 oz
  • Butter - 1.8 oz
  • 10% cream - 0 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Prepare the dough: knead 500 g of flour, eggs, water, and yeast, cover the bowl with plastic wrap, and let it rest in a warm place for 30 minutes.

Step 2

Prepare the filling sauce. Sauté the onions, then add the chanterelle mushrooms, sour cream, cream, cheese, and season with salt and pepper. Stir gently over medium heat for about 5 minutes.

Step 3

Roll out the dough, dusting it with flour, then place the chilled sauce filling on it. Pinch the edges of the dough and bake the pie in the oven for 8-9 minutes at a temperature of 410°F.

Step 4

Sauté a handful of fresh small chanterelles separately and place them on top of the pie when serving.
