Open Pumpkin Pie
Ingredients
- Wheat Flour - 1 cup
- Butter - 3.5 oz
- Water - 3 tablespoons
- Salt - a pinch
- Pumpkin - 17.6 oz
- 10% cream - 7 fl oz
- Brown Sugar - 3 tablespoons
- Cinnamon - ½ teaspoon
- Nutmeg - ¼ teaspoon
Step by Step guide
Step 1
Chop the cold butter with flour and salt into fine crumbs.
Step 2
Gradually add water, quickly knead into a thick, pliable dough (the butter should not melt).
Step 3
Wrap in plastic wrap and refrigerate for half an hour, or preferably for an hour.
Step 4
Peel the pumpkin from the skin and seeds, cut into pieces, and boil in salted water until soft.
Step 5
Drain the water. Blend the pumpkin with a blender or pass it through a meat grinder. Add cream, 3 tablespoons of flour, spices, sugar, salt, and mix everything thoroughly.
Step 6
Preheat the oven to 356°F.
Step 7
Roll out the dough into a thin layer of 1.5–2 mm, place it in an open pie dish, prick the surface with a fork, and bake in the oven for 5 minutes.
Step 8
After that, remove from the oven, spread the filling on the base, and return to the oven for another 40–45 minutes.
Step 9
Serve slightly cooled with ice cream or whipped cream.
