Ingredients
- Oranges - 4 pieces
- Bananas - 3 pieces
- Butter - 1.8 oz
- Sugar - 3.5 oz
- Coarsely Ground Rye Flour - 3.5 oz
- Baking Powder - 0.2 oz
- Farm fresh eggs - 3 pieces
Step by Step guide
Step 1
Preheat the oven to 374°F. Take out the mold (I have a silicone square one, 23x23 cm).
Step 2
Peel the oranges. Cut 2 of them into rings about 0.7–1 cm thick. Cut the remaining 2 into quarters and then into pieces about 1 cm thick.
Step 3
Heat a skillet, add 5 grams of butter and 1.5 tablespoons of sugar to make caramel (there are many recipes for this) and place the orange rings into the prepared caramel. Caramelize them for about 5 minutes until they turn a nice caramel color.
Step 4
Arrange the orange rings evenly across the bottom of your mold.
Step 5
Slice the bananas diagonally into rings (so the rings are oval, not round). Caramelize them in the skillet as well, using 5 grams of butter and 1 tablespoon of sugar. Place them in the mold.
Step 6
Caramelize the remaining orange pieces. Again, use 5 grams of butter and 1 tablespoon of sugar. Place them in the mold.
Step 7
Make the batter. Beat the 3 eggs with the remaining sugar (1.5 tablespoons) using a mixer. Add the remaining butter (35 grams) while continuing to beat. Add the baking powder and flour, and mix on low speed until there are no lumps.
Step 8
Pour the batter over the fruit in the mold and bake in the oven for 40 minutes. Then take it out of the oven, flip it onto a plate, and it can be served.
