Orange Cake with Cottage Cheese Cream, Mango, and Poppy Seeds
Ingredients
- Sugar - 6 oz
- Chocolate eggs - 4 pieces
- Mango - 3 pieces
- Orange juice concentrate - 3 tablespoons
- Orange zest - 2 tablespoons
- Poppy seed paste - a pinch
- Salt - to taste
- Wheat Flour - 5.3 oz
- Baking Powder - 2 teaspoons
- Gelatin - 8 pieces
- Oranges - 1 piece
- Lemon - 1 piece
- Citrus Zest Mix - 2 tablespoons
- Cottage cheese - 8.8 oz
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Beat the eggs with 100 g of sugar. Add the grated orange zest, poppy seeds, and salt. Pour in the orange juice and mix.
Step 3
Sift the flour with the baking powder. While constantly stirring the egg mixture, gradually add the flour and knead the dough.
Step 4
Place the prepared dough into a baking pan lined with parchment paper.
Step 5
Bake for about 30 minutes.
Step 6
Soak the gelatin in cold water.
Step 7
Peel 2 mangoes and remove the pits. Blend the mango flesh with the orange and lemon juice. Add sugar. Once the sugar dissolves, add the cottage cheese to the puree and mix again. Add the gelatin, mix, and let the jelly set.
Step 8
Cut the cake into two layers. Spread half of the cream in between, and place the remaining on top of the cake. Decorate the cake with slices of mango and orange.
Step 9
Refrigerate the finished cake for a few hours.
