Ingredients
- Sugar - 7.1 oz
- Large eggs - 3 pieces
- Milk - 12 fl oz
- Olive Oil - 8 fl oz
- Olive Oil - 0 fl oz
- Wheat Flour - 6.3 oz
- Orange zest - 0 fl oz
- Amaretto Liqueur - 2 fl oz
- Corn Flour for Polenta - 2.1 oz
- Baking Powder - 0.1 oz
- Activated Baking Soda - 0.1 oz
- Salt - a pinch
- Powdered Sugar - to taste
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Grease a baking pan (23–25 cm in diameter) generously with olive oil and dust with flour.
Step 3
In a large bowl, beat the eggs with sugar until fluffy and light. Add the milk, oil, amaretto, orange zest, and mix well.
Step 4
In another bowl, combine both types of flour, baking powder, baking soda, and salt. Gently fold the egg mixture into the flour mixture (the batter should be lumpy, do not overmix, the airiness should be preserved).
Step 5
Pour the batter into the pan and place it on the middle rack of the oven. Bake for 40–50 minutes, checking for doneness with a toothpick (it should come out with a few crumbs).
Step 6
Remove from the oven and cool on a rack, without removing from the pan.
Step 7
After cooling, carefully run a knife around the edge of the pan and transfer the cake to a plate. Dust with powdered sugar.
