Ingredients
- Liquid dark chocolate - 2.8 oz
- Oranges - 1 piece
- Farm fresh eggs - 2 pieces
- Raw cane sugar - 2 teaspoons
Step by Step guide
Step 1
Grate the zest of one orange using a fine grater. Squeeze the juice from half of the fruit.
Step 2
Whip the chilled egg whites until stiff peaks form. Separately, beat the yolks with sugar until pale.
Step 3
Melt the chocolate, broken into small pieces, using your preferred method: in a water bath or in the microwave.
Step 4
Add the orange zest to the hot melted chocolate – what an aromatic combination!
Step 5
Now fold the yolks into the chocolate, then pour in the orange juice, and gently add the whipped egg whites while mixing everything into a uniform mass.
Step 6
It's time to distribute the mousse into molds and leave it in the refrigerator for a few hours.
Step 7
Garnish the chilled, set dessert with orange segments, its zest, chocolate crumbs, or shavings.
