Description
Instead of vanilla extract, you can confidently add vanilla sugar. Since it's hard to find a product fully equivalent to sour cream abroad, I replaced it with Greek yogurt — neither the taste nor the consistency suffered. If the oranges are very juicy, sprinkle them with a small amount of cornstarch. You can choose not to mix the orange pieces into the batter, but instead place a few pieces in each mold filled to 1/3. Cover with batter on top and bake — it will result in a wonderful juicy center.

- Large eggs - 1 piece
- Wheat Flour - 2 cups
- Sugar - 1 cup
- Vanilla extract - 1 teaspoon
- Baking Powder - ½ teaspoon
- Activated Baking Soda - 1 teaspoon
- Mini Chocolate Chips - 1.8 oz
- Sour Cream - 1 tablespoon
- Vegetable Oil - 1 tablespoon
- Orange zest - 1 piece
- Powdered Sugar - to taste
Step by Step guide
Step 1
Beat the chilled eggs with sugar. Add vanilla extract, vegetable oil, and sour cream.
Step 2
Mix the dry ingredients: flour, baking soda, baking powder. Whisk everything together until smooth.
Step 3
Zest the orange and finely chop it.
Step 4
To use the orange for baking, you need to create 'fillets'. To do this, cut off a circle from both ends and place the orange on a cutting board. Peel the orange, slightly capturing the flesh. From the peeled orange, carefully cut out individual segments, freeing them from the membrane. Cut the peeled segments into small pieces.
Step 5
Add the zest, orange pieces, and chocolate chips to the batter and gently mix with a spatula.
Step 6
Grease the molds with a small amount of oil and fill them to 2/3.
Step 7
Place them in a preheated oven at 356°F for 20–25 minutes.
Step 8
Optionally, the muffins can be decorated with powdered sugar.
