Description
You can use regular high-grade wheat flour, but an alternative of coarser grind is just as effective in practical use (despite its lower gluten content). For those who enjoy healthy baking, you can additionally mix in a tablespoon of fiber (flaxseed, milk thistle, or any other suitable option) into the batter - it won't significantly affect the taste, but the benefits are great! Seeds can easily be replaced with nuts (peanuts, walnuts, almonds...) or you can roast them instead of soaking if that suits your preference. Traditional kefir can be substituted with yogurt, buttermilk, or sour cream. Get creative based on your own preferences: pancakes are a wonderful base for culinary variety!
Ingredients
- Wheat Flour - 5 tablespoons
- Chicken Egg - 1 piece
- Kefir - 0.7 cups
- Activated Baking Soda - a pinch
- Oranges - 1 piece
- Raisins - 1.8 oz
- Ground Cinnamon - ½ teaspoon
- Sugar - 2 teaspoons
- Salt - a pinch
- Sunflower Seeds - 1.4 oz
- Honey - 1.4 oz
Step by Step guide
Step 1
Whisk the egg with sugar and add the kefir. Gradually sift in the flour, add the baking soda, salt, and knead the batter.
Step 2
Grate the zest of one washed orange on a fine grater. Mix the prepared soaked raisins (simply soaked in boiling water for about 5 minutes) and peeled sunflower seeds (also soaked) with the zest into the batter, add a bit of cinnamon, and mix everything thoroughly once more.
Step 3
On a heated skillet with vegetable oil, place the pancakes and cook for a few minutes on both sides until done.
Step 4
While the finished pancakes cool on a paper towel (absorbing excess oil), and the next batch is frying, mix honey with orange juice in a separate bowl (squeeze a few wedges from half an orange for every 2 teaspoons of honey). Brush each finished pancake with the prepared sauce.
Step 5
You can garnish the dish with orange slices or sprinkle with zest/powdered sugar to your taste and happily serve a fragrant breakfast to your loved ones.
