Orange Panna Cotta
Ingredients
- Oranges - 2 pieces
- Egg Yolk - 4 pieces
- Milk - 7 fl oz
- Gelatin - 1 tablespoon
- Water - 3 fl oz
- Sugar Substitute - to taste
- Walnuts - 6 pieces
- Vanillin - a pinch
Step by Step guide
Step 1
Grate the zest from the oranges, then separately squeeze the orange juice.
Step 2
Soak the gelatin in cold water for 10 minutes, then add 1/2 of the juice obtained.
Step 3
Beat the yolks until they form a pale yellow foam.
Step 4
Bring the milk to a boil, add the zest, vanillin, and sweetener (I used stevia), and cook for about 2 minutes.
Step 5
Pour in the remaining juice and carefully introduce the yolks in a thin stream.
Step 6
Cook on low heat for 12 minutes, stirring constantly.
Step 7
Remove from heat and let it cool slightly.
Step 8
Dissolve the swollen gelatin over low heat (do not boil) and pour it into the milk-orange mixture, mix well, pour into molds (I divided it into 4 portions - filled 4 short glasses halfway, but it could have been made into 2 full glasses) and place in the refrigerator until set.
Step 9
Before serving, garnish with finely chopped walnuts.
