Orange Peel Jam
Ingredients
- Water - 10 fl oz
- Oranges - 3 pieces
- Sugar - 10.6 oz
- Meyer Lemon Juice - 1 fl oz
- Ginger - 0.4 oz
Step by Step guide
Step 1
Thoroughly wash the oranges and pour boiling water over them to remove the layer of preservatives from the surface. Cut each orange lengthwise into 4 parts, then cut each part in half again. Remove the pulp, and then cut each piece of peel in half again, resulting in fairly thin strips.
Step 2
Place the strips of peel in a deep bowl and completely cover them with water. Soak for 3 days, changing the water regularly (about 4–5 times a day).
Step 3
Then, using a knife, remove the albedo (the white part on the inside of the peel) from each strip. Roll each strip into a spiral and thread them onto a string like beads. If the orange has thin skin, you can skip removing the albedo. In this case, roll the spirals before soaking and cover the finished beads with water.
Step 4
After soaking, boil the peel 3–4 times for 15–20 minutes each time, discarding the water. After each boiling, rinse the beads of peel with cold water.
Step 5
In a wide pot, prepare a syrup from water and sugar, add the prepared beads, bring to a boil, and simmer on low heat for 20–30 minutes, then turn off the heat and let it cool.
Step 6
Repeat the process once more, but add lemon juice after boiling.
Step 7
Once the jam has cooled, remove the beads and take out the strings. Transfer to a jar (300 ml) and store in the refrigerator.
