Ingredients
- Wheat Flour - 4.4 oz
- Cocoa Powder - 1.8 oz
- Baking Powder - ½ teaspoon
- Salt - ½ teaspoon
- Powdered Sugar - 3.5 oz
- Vanilla salt - 1 teaspoon
- White Chocolate - 3.9 oz
- Semi-soft cream cheese - 6 oz
- Butter - 7.2 oz
- Meyer Lemon Juice - 1 teaspoon
Step by Step guide
Step 1
Beat 125 g of softened butter, gradually adding powdered sugar and vanilla sugar. Whip until smooth. In a bowl, mix the dry ingredients: flour, cocoa powder, baking powder, and salt. Combine all ingredients and knead the dough. Initially, it will be crumbly, but once it becomes uniform, knead it into a ball — the dough will hold its shape well. Place in the refrigerator for 30 minutes.
Step 2
Then, roll out the dough between two layers of plastic wrap to a thickness of no less than 3 mm. It's better to be slightly thicker than thinner!
Step 3
Cut out shapes.
Step 4
Preheat the oven to 356°F. Place the circles on a baking sheet lined with parchment paper. Bake for 10 minutes. The key is not to overbake!
Step 5
Remove the baking sheet and let it cool, as it is very soft and fragile at this moment. So, do not touch it during this time. Once the cookies cool, they will harden. Now you can easily remove them.
Step 6
For the cream, break the chocolate into pieces and melt it in a water bath or microwave. Let it cool to room temperature. In a bowl, beat the softened cream cheese, gradually adding the cooled chocolate while continuing to beat. When the mixture is smooth, add the lemon juice and 80 g of softened butter.
Step 7
To assemble the cookies, take one half, place a teaspoon of cream on it, and cover with the other half.
