Ossetian Meat Pie
Ingredients
- Wheat Flour - 14.1 oz
- Kefir - 7 fl oz
- Coarse Salt - 1 tablespoon
- Activated Baking Soda - 0.1 oz
- Dry yeast - 2 spoons
- Onion - 1 head
- Lean Beef - 14.1 oz
- Vegetable Oil - 2 fl oz
- Cilantro - 1 bunch
- Garlic - 3 cloves
- Ground Black Pepper - to taste
Step by Step guide
Step 1
For the dough, add baking soda to room temperature kefir and let it sit until frothy (if using ayran instead of kefir, do not add baking soda). In a bowl, mix together the flour, salt, and yeast. Then add the kefir and vegetable oil, knead the dough, and let it rise for 40 minutes, covered with a towel or plastic wrap.
Step 2
For the filling, add salt, ground pepper, finely chopped onion, cilantro, and garlic to the minced meat (you can also make a filling from cheese, potatoes, beet greens, and any combinations of these ingredients).
Step 3
Divide the dough into 5 portions and roll them into balls, dust with flour, and let them rest for 10–15 minutes. Then roll them out into round flatbreads, place the filling in the center (the amount of filling should equal the amount of dough!!!), pinch the edges of the dough towards the center, and roll out the flatbread. Make a small hole in the center for steam to escape.
Step 4
Bake in the oven at 392°F. The cooking time depends on the filling: meat pie — 35–40 minutes; Adyghe cheese, Ossetian cheese, boiled potatoes, beet greens (in various combinations) — 15–20 minutes.
Step 5
Stack the finished pies, brushing each one with butter.
