Pancake Pouches with Asparagus Sauce

Ingredients

  • Wheat Flour - 2.8 oz
  • Sugar - 1 teaspoon
  • Chicken Egg - 1 piece
  • Milk - 6 fl oz
  • Onion - ½ piece
  • Vegetable Oil - 3 tablespoons
  • Garlic - 1 clove
  • Celery stalk - ½ piece
  • Orange Bell Peppers - ½ piece
  • Carrot - ½ piece
  • Asparagus - 7.1 oz
  • Chopped Sage Leaves - 2 tablespoons
  • 10% cream - 3 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Green onion tops - 6 pieces
  • Courgette - ½ piece

Step by Step guide

Step 1

For the pancakes, mix the flour with sugar and salt. Make a well in the center and pour in the lightly beaten egg. Mix with a whisk, starting from the center and gradually incorporating more flour from the edges of the bowl. Add the milk in a thin stream while continuing to stir. Incorporate 2 teaspoons of oil into the batter, cover it, and let it rest for about an hour.

Step 2

Pour half of the remaining oil into a bowl. Using a pastry brush, apply a thin layer to a 20 cm skillet and heat it well. Use a ladle to pour a small amount of batter, spreading it into a thin layer in the skillet. Cook for 1 minute, flip the pancake, and let it brown on the other side. Similarly, cook five more pancakes.

Step 3

For the filling, finely chop all the vegetables. Heat the remaining oil in a deep skillet and sauté the onion and garlic. Add the other vegetables and cook them until tender over medium heat. Season with salt and pepper, remove from heat, and stir in 2 tablespoons of cream.

Step 4

For the asparagus sauce, blanch the asparagus stalks in boiling salted water. Puree the asparagus with the remaining cream, strain the sauce through a sieve, and season with salt if necessary.

Step 5

For serving, blanch the green onion tops. Place 2 tablespoons of filling in the center of a pancake, gather the edges at the top, and tie them with a green onion top. Pour a little asparagus sauce onto the bottom of a serving plate and place the pancake pouch in the center. Prepare 5 more servings in the same way.
