Ingredients
- Apple - 4 pieces
- Meyer Lemon Juice - 1 fl oz
- Butter - 2.5 oz
- Light Raisins, Seedless - 1.8 oz
- Rum - 1 fl oz
- Sugar - 1.6 oz
- Cinnamon - 1 piece
- Starch film - 1 tablespoon
- Sour Cream - to taste
- Whipped Cream - to taste
- Thin Crepes - 10 pieces
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Soak the raisins in rum (if there's not enough rum, dilute it with hot water).
Step 3
Peel the apples and remove the core.
Step 4
Cut the apples into 7 mm cubes and drizzle with lemon juice.
Step 5
Melt butter in a skillet, then add apples, sugar, and cinnamon.
Step 6
Caramelize the apples over medium heat: they should be coated with a golden caramel crust, become soft, but still hold their shape.
Step 7
In the end, add raisins to the apples and mix well.
Step 8
Remove the cinnamon stick, add the cornstarch, and heat while stirring for another 2–3 minutes.
Step 9
Place the filling onto the pancakes and roll them up into roulades or fold them into envelopes.
Step 10
Serve the pancakes with sour cream or whipped cream.
