Ingredients
- Milk - 17 fl oz
- Chicken Egg - 3 pieces
- Sugar - 1.1 oz
- Salt - ¼ spoons
- Activated Baking Soda - ¼ spoons
- Wheat Flour - 7.4 oz
- Vegetable Oil - 1 fl oz
- Lightly Salted Red Fish - 7.1 oz
- Avocado - 1 piece
- Cilantro - to taste
- Meyer Lemon Juice - to taste
- Semi-soft cream cheese - 7.1 oz
- Sour Cream - 3.5 oz
Step by Step guide
Step 1
Prepare all the ingredients. Heat the milk to 104°F.
Step 2
Whisk together 3 eggs with sugar and salt until the sugar is dissolved.
Step 3
Pour in 100 ml of milk and stir.
Step 4
Sift all the flour, add the baking soda, and mix thoroughly with a whisk until you achieve a smooth, thick, and sticky batter.
Step 5
Gradually incorporate the remaining milk into the dough.
Step 6
Add vegetable oil and mix again. Let the prepared dough rest for 15–20 minutes.
Step 7
Peel the avocado and remove the pit. Mash it with a fork.
Step 8
Add finely chopped cilantro to the avocado, drizzle with lemon juice. Season with salt and pepper.
Step 9
Mix the cream cheese and sour cream.
Step 10
Preheat the crepe pan well, brush it with vegetable oil, and pour a little batter onto it, spreading it evenly across the bottom. Cook for 15–20 seconds.
Step 11
When the edges of the pancake turn golden brown, flip it over and cook for another 10 seconds. Repeat this process for all the pancakes.
Step 12
Spread the pancake with a mixture of cream cheese and sour cream, then add mashed avocado and slices of fish.

Serve immediately.
