Ingredients
- 3.2% Milk - 1 qt
- Sugar - 2.1 oz
- Salt - 0.3 oz
- Farm fresh eggs - 6 pieces
- Wheat Flour - 12.3 oz
- Vegetable Oil - 4 fl oz
- Clarified Butter - 5.3 oz
- Mascarpone Cheese Unagrande - 1.8 oz
- Semi-soft cream cheese - 3.5 oz
- Sour Cream - 1.1 oz
- Cream 22% - 1 fl oz
- Scallions - 0.7 oz
- Red Caviar - 1.8 oz
Step by Step guide
Step 1
In a deep bowl, crack 6 eggs, add salt, sugar, and milk. Mix until smooth.
Step 2
Then add the flour, mix again, and pour in 140 milliliters of vegetable oil. Mix until the consistency is uniform.
Step 3
Let the prepared batter rest in the refrigerator for 30 minutes.
Step 4
Heat a skillet and fry the pancakes until golden brown on both sides. Brush the finished pancakes with clarified butter.
Step 5
Prepare the cream sauce. Combine mascarpone, cream cheese, sour cream, and cream in a blender bowl. Whip until fluffy and smooth.
Step 6
Finely chop the green onion and add it to the sauce.
Step 7
Spread cream sauce on a quarter of the pancake, fold it to form a triangle.
Step 8
Place the pancakes on a plate, then top each with red caviar around the edge.
Step 9
Garnish with green onion.
