Ingredients
- 3.2% Milk - 1 qt
- Wheat Flour - 12.7 oz
- Chocolate eggs - 5 pieces
- Vegetable Oil - 0 fl oz
- Salt - to taste
- Sugar - 1.1 oz
- Feta cheese - 31.7 oz
- Cream 22% - 20 fl oz
- Fresh basil leaves - 10.6 oz
- Olive Oil - to taste
Step by Step guide
Step 1
Whisk the eggs with milk, salt, and sugar.
Step 2
Sift the flour and gradually add it to the milk-egg mixture while continuing to whisk.
Step 3
Add the vegetable oil and mix until smooth.
Step 4
Prepare the feta mousse. Rinse the spinach leaves and sauté them for 30 seconds.
Step 5
Cool in ice water. Squeeze out excess water and chop finely.
Step 6
Pass the feta through a fine sieve and add the cream.
Step 7
Whisk until medium peaks form.
Step 8
Add the chopped spinach.
Step 9
Fry the pancakes on both sides until golden brown. Brush each pancake with butter.
Step 10
Serve the feta and spinach mousse in a sauce boat and drizzle with olive oil.
