Description
Recipe from the book by Emily Johnson 'Morning'.
Ingredients
- Apple - 5 pieces
- Chicken Egg - 1 piece
- Wheat Flour - 3 spoons
- Fig - 2 pieces
- Ground Cinnamon - ½ spoons
- Vegetable Oil - 2 spoons
- Butter - 1 tablespoon
- Apricot Jam - to taste
- Salt - to taste
Step by Step guide
Step 1
Grate the apples (preferably firm varieties that are fragrant, dry, and slightly tart, such as Antonovka or Cinnamon) along with the skin on a coarse grater, and squeeze out the excess juice.
Step 2
Crack an egg into the apples, add flour, sprinkle in cinnamon, season with salt, and mix well. It's better not to add sugar to prevent the pancakes from burning.
Step 3
In a skillet, heat the butter with the vegetable oil and fry the pancakes over medium heat. If there are any apples left, slice them and sauté in the same skillet until golden brown (you can use them to garnish the dish later).
Step 4
Serve the pancakes with fresh fig slices and lemon or orange zest jam.
