Description
Excellent pancakes with holes can be achieved in two ways. The first is by enriching the batter with baking soda, acid, and, as a result, carbon dioxide (see the recipe above with kefir). The second is by adding fresh yeast. We have made this recipe many times, and each time the holes turned out remarkable. This particular recipe was shared with us by Chef John Smith from a local restaurant, and it comes with his interesting story.
Ingredients
- Milk - 1 qt
- Chicken Egg - 4 pieces
- Sugar - 5.3 oz
- Salt - 0.6 oz
- Dry yeast - 0.2 oz
- Vegetable Oil - 3 fl oz
- Wheat Flour - 14.1 oz
Step by Step guide
Step 1
Heat the milk to 93°F.
Step 2
Mix warm milk with sugar and yeast.
Step 3
Add the eggs, salt, and flour.
Step 4
Blend the batter with an immersion blender. If you don't have an immersion blender, whisk the batter thoroughly and then strain it through a sieve to remove any lumps.
Step 5
Cover the dough with plastic wrap and leave it at room temperature for 2 hours. It will rise and become filled with bubbles.
Step 6
Preheat the skillet well and brush it with a thin layer of vegetable oil.
Step 7
Pour the batter into the hot skillet.
Step 8
Fry until golden brown, no more than 1 minute.
Step 9
Then flip the pancake and cook for another 20-30 seconds.
Step 10
Fry all the batter in this way, greasing the frying pan with oil each time.
