Ingredients
- Butter - 2.8 oz
- Nuts - 1.8 oz
- Farm fresh eggs - 2 pieces
- Honey - 3.5 oz
- Lime - 2 pieces
- Vanilla extract - ½ teaspoon
- Almond - ½ teaspoon
- Wheat Flour - 3.5 oz
- Milk - 7 fl oz
Step by Step guide
Step 1
Melt 30 g of butter. Chop 25 g of nuts in a blender or grate them.
Step 2
To prepare the pancakes, separate the yolks from the whites. Whisk the yolks with 50 g of honey, add the butter, lime zest, vanilla extract, and almond extract. Mix, then sift in the flour. Add the grated nuts.
Step 3
Whip the egg whites until stiff peaks form and fold them into the mixture.
Step 4
Heat 50 g of butter in a non-stick skillet and cook the pancakes for 2 minutes on each side. Plate them.
Step 5
Boil 50 g of honey for 1 minute, add 25 g of nuts, lime juice, and zest, and mix. Drizzle the sauce over the pancakes before serving.
