Pancakes with lingonberries and white chocolate
Ingredients
- Milk - 17 fl oz
- Chicken Egg - 1 piece
- Wheat Flour - 7.1 oz
- Vegetable Oil - 1 fl oz
- Activated Baking Soda - a pinch
- Lingonberry - 10.6 oz
- Sugar - 2.8 oz
- White Chocolate - 4.2 oz
- Starch film - 1.4 oz
- Water - 3 fl oz
- Ghee - 0.9 oz
- Salt - ¼ spoons
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
In a mixing bowl, pour in the milk, add the egg, salt, 1 tablespoon of sugar, baking soda, vegetable oil, and flour. Mix until smooth. Refrigerate for 1 hour.
Step 3
Sprinkle the lingonberries with sugar and heat until the sugar dissolves.
Step 4
Dissolve the starch in cold water.
Step 5
Add the starch to the lingonberries.
Step 6
Bring to a boil and remove from heat. Allow to cool.
Step 7
Melt 80 grams of white chocolate in the microwave or using a double boiler. Mix the chocolate with lingonberries.
Step 8
Preheat a crepe pan and grease it with a piece of pork fat.
Step 9
Pour in the pancake batter, cook for 1–2 minutes, then flip and cook for about another 30 seconds. Continue cooking all the pancakes this way.
Step 10
Spread the lingonberry filling onto the finished crepes and roll them up like a roulade.
Step 11
Fry the pancakes in melted butter.
Step 12
Serve hot, drizzled with melted white chocolate.
