Ingredients
- Milk - 17 fl oz
- Chicken Egg - 9 pieces
- Sugar - 1.1 oz
- Salt - ¼ spoons
- Activated Baking Soda - ¼ spoons
- Wheat Flour - 7.4 oz
- Vegetable Oil - 1 fl oz
- Scallions - 3.5 oz
- Butter - 0.7 oz
Step by Step guide
Step 1
Prepare all the ingredients. Heat the milk to 104°F.
Step 2
Whisk 3 eggs with sugar and salt until the sugar is dissolved.
Step 3
Pour in 100 ml of milk and stir.
Step 4
Sift all the flour, add the baking soda, and whisk thoroughly until you achieve a uniform thick, sticky batter.
Step 5
Gradually incorporate the remaining milk into the dough.
Step 6
Add vegetable oil and mix again. Let the prepared dough rest for 15–20 minutes.
Step 7
For the filling, hard-boil the remaining eggs and grate them using a coarse grater.
Step 8
Slice the green onions into rings.
Step 9
In a large skillet, melt the butter and sauté the green onions for a few minutes.
Step 10
Mix the onions with the eggs, and season with salt and pepper to taste.

Preheat the crepe pan well, brush it with vegetable oil, and pour a small amount of batter onto it, spreading it evenly across the bottom. Cook for 15–20 seconds.
Step 12
When the edges of the pancake are golden brown, flip it over and cook for another 10 seconds. Repeat this process for all the pancakes.
Step 13
Wrap the filling with onions and eggs in the crepes.
Step 14
Serve with onions, eggs, and sour cream.
