  • Low-fat lactose-free milk - 7 fl oz
  • Low-fat lactose-free milk - 3 fl oz
  • Butter - 3.5 oz
  • Dry yeast - 0.2 oz
  • Baking Powder - 0.6 oz
  • Salt - 0.4 oz
  • Sugar - 3.2 oz
  • Activated Baking Soda - 0.2 oz
  • Red Caviar - 7.1 oz
  • Gold Leaf Powder - 0.9 oz
  • Scallions - 0.4 oz

Step by Step guide

Step 1

Make the dough: mix the milk and kefir and heat to 99°F.

Step 2

Add the fresh yeast.

Step 3

Whisk the salt, sugar, and egg in a mixer, then add the mixture of baking soda and baking powder. Gradually incorporate the flour in three additions.

Step 4

Bring the butter to a boil and pour it into the dough. Whip the mixture at maximum speed and let it rest for three hours, covered with plastic wrap.

Step 5

Shape the pancakes and fry them in a large amount of vegetable oil on both sides until golden brown.

Step 6

Whip the slightly melted butter with a whisk until airy, adding a little salt.

Step 7

Spread the cream and caviar (red or black) on the cooled pancakes, garnish the appetizer with pieces of gold leaf and green onions, and serve.
