Pancakes with Strawberries and Coconut

Ingredients

  • Milk - 7 fl oz
  • Sugar - 2.1 oz
  • Salt - a pinch
  • Baking Powder - 0.2 oz
  • Chicken Egg - 1 piece
  • Wheat Flour - 5.3 oz
  • Strawberry - 5.6 oz
  • Mint - 2 sprigs
  • Papaya flesh - 1.8 oz

Step by Step guide

Step 1

Whisk the milk with the egg, 20 grams of sugar, and a pinch of salt until smooth.

Step 2

Add the sifted flour and baking powder, and mix again.

Step 3

Slice 60 grams of strawberries into thin slices.

Step 4

Heat a frying pan and add a little vegetable oil.

Step 5

Spoon the batter onto the pan in small portions, you can fry 3–4 pancakes at a time.

Step 6

Place the strawberry slices on top of the batter that hasn't set yet. Fry until golden brown, then flip and fry on the other side until golden brown as well.

Step 7

Finely chop the mint leaves, reserving a few whole leaves for garnish.

Step 8

For the strawberry coulis, blend the remaining strawberries with 40 grams of sugar until smooth.

Step 9

Add the chopped mint and mix.

Step 10

Slice the coconut flesh into very thin slices.

Step 11

Place the finished pancakes on a plate, drizzle with the strawberry coulis, and garnish with coconut slices and mint leaves.

Step 12

Serve with coffee brewed in a Polaris PACM 2080AC IQ Home coffee machine.
