Ingredients
- Hazelnut - 3.9 oz
- Chopped almonds - 3.9 oz
- Dried ground orange peel - 4.4 oz
- Canned Pineapple Chunks - 3.5 oz
- Citrus Zest Mix - 4 tablespoons
- Wheat Flour - 2.6 oz
- Ground Cinnamon - 1 teaspoon
- Ground coriander - ¼ teaspoon
- Ground clove - ¼ teaspoon
- Nutmeg - ¼ teaspoon
- White Pepper (whole) - a pinch
- Sugar - 5.3 oz
- Honey - 4 tablespoons
- Butter - 1.8 oz
- Powdered Sugar - to taste
Step by Step guide
Step 1
Line a 20 cm long baking pan with parchment paper and grease it with butter.
Step 2
Toast the nuts on a grill or dry skillet until golden. Let cool. Place the nuts in a bowl with the candied peel, diced pineapple, lemon zest, flour, and spices. Mix well. Preheat the oven to 302°F.
Step 3
In a saucepan, combine sugar, honey, and butter. Melt and bring the syrup to 244°F, or until a drop of syrup in cold water hardens immediately.
Step 4
Pour the syrup over the nut mixture and mix well. Do this quickly to prevent the syrup from hardening. Spread the mixture onto a baking sheet, flatten it, and bake for 35 minutes.
Step 5
Cool on the baking sheet, remove the paper, and cut into small strips. Dust with powdered sugar.
