  • Cream (40%) - 17 fl oz
  • Milk - 7 fl oz
  • Vanillin - 0.1 oz
  • Gelatin - 1.1 oz
  • Sugar - 3.5 oz
  • Freeze-dried strawberry powder - 1.8 oz
  • Frozen Raspberries - 1.8 oz
  • Frozen black currant puree - 1.8 oz
  • Butter - 3.5 oz
  • Brown Sugar - 1.1 oz
  • Fresh Mint - 0.1 oz
  • Balsamic Vinegar - 0 fl oz

Step by Step guide

Step 1

Mix cream, milk, vanillin, and sugar, bring to a boil, and add gelatin.

Step 2

Pour into silicone molds and let cool.

Step 3

For the sauce, melt the butter, sauté the berries, then add sugar and balsamic vinegar.

Step 4

Serve drizzled with berry sauce.
