Panna Cotta with Strawberry and Chia Seeds
Ingredients
- Milk - 8 fl oz
- 33% Cream - 7 fl oz
- Chia Seeds - 3 spoons
- Honey - 6 teaspoons
- Vanilla Pod - ½ pieces
- Freeze-dried strawberry powder - 10.6 oz
- Strawberry - 3.5 oz
- Meyer Lemon Juice - 2 spoons
- Citrus Zest Mix - to taste
- Corn Starch - 1½ spoons
- Gelatin - 0.4 oz
- Rum - 0 fl oz
Step by Step guide
Step 1
Soak the gelatin in 50 grams of cold milk.
Step 2
Pour the remaining milk and cream into a saucepan, add the vanilla, and bring to a boil over medium heat.
Step 3
Cover with a lid and let it steep for 15 minutes.
Step 4
Remove the vanilla, add the chia seeds, gelatin, and half of the honey, and mix until smooth. Let it sit for a few minutes.
Step 5
Pour the creamy mixture into dessert cups and refrigerate for 2 hours.
Step 6
Prepare the strawberry sauce. Blend the thawed strawberries into a puree, then strain through a fine sieve to remove the seeds.
Step 7
In a small bowl, mix the starch with 2 tablespoons of cold water.
Step 8
Transfer the puree to a saucepan, add the starch, bring to a boil, and let it simmer for 2 minutes, stirring constantly.
Step 9
Remove from heat and let cool for 10 minutes. Add honey and lemon juice.

Meanwhile, prepare the garnish. Rinse the fresh strawberries and dry them with a paper towel. Place the berries in a bowl, grate the zest from 1/4 of a lemon using a coarse grater, and sprinkle it over the berries. Pour in the rum and 5 ml of lemon juice. Gently mix the berries with a spoon and let them sit for 5 minutes.

Top the panna cotta with strawberry puree, garnish with berries, and serve.
