Panna Cotta with Tropical Fruits
Ingredients
- 33% Cream - 4 fl oz
- Cane Sugar - 0.4 oz
- Vanilla Pod - 0.1 oz
- Salt - ½ g
- Gelatin - 0 oz
- Mango-Passion Fruit Syrup - 1.1 oz
Step by Step guide
Step 1
Add cane sugar and vanilla pods to the cream and mix.
Step 2
Heat the mixture to 50°C, add gelatin, and stir thoroughly.
Step 3
Add floral salt.
Step 4
Pour everything into the desired mold and refrigerate until set (about 2-3 hours).
Step 5
Drizzle the panna cotta with mango-passion fruit sauce.
Step 6
Whip the cream (30 ml) and use a hot spoon to place a quenelle of cream on the panna cotta.
Step 7
Garnish with fresh coconut, blueberries, raspberries, pineapple chips, pomegranate, mint, as well as balls of kiwi and mango.
