Description
Indian cuisine varies from state to state, but one thing remains unchanged — the paratha. This translates roughly to 'layered flatbread': unleavened dough is rolled out several times, brushed with ghee, and pan-fried. There is also a second option, where a filling is placed between two thin flatbreads. To make it truly Indian, the filling should be quite spicy.
Ingredients
- Potato - 5 pieces
- Cilantro - 1.8 oz
- Ground ancho chili pepper - 5 pieces
- Mild Chili Spice - 1 tablespoon
- Chili Flakes - 1 tablespoon
- Wheat Flour - 14.1 oz
- Salt - 1½ spoons
- Ghee - 2.8 oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Peel the potatoes and boil them until tender, then mash the cooked potatoes into a puree.
Step 3
Add a teaspoon of salt, ground chili, chili flakes, and chopped cilantro and green chili, then mix well.
Step 4
Combine the sifted flour, 300 ml of water, and half a teaspoon of salt.
Step 5
Knead a soft, but not sticky dough. Wrap it in plastic wrap and let it rest for 20–30 minutes.
Step 6
Divide the dough into eight equal pieces and roll them into balls. Take two dough balls and flatten them into round patties.
Step 7
Place about 3 tablespoons of potato filling on one dough round, cover it with a second dough round, and seal the edges well. You can moisten the edges with water to make sealing easier.
Step 8
Slowly roll out the dough without pressing too hard, making sure that the filling doesn't escape from anywhere.
Step 9
Heat a skillet with melted butter and fry the paratha for 1–2 minutes on each side.
Step 10
Serve with yogurt and chutney.
