Ingredients
- Whole egg - 5 pieces
- Amaretto Liqueur - 2 fl oz
- 10% cream - 10 fl oz
- Powdered Sugar - 5.3 oz
- Water - 3 fl oz
- Sugar - 3.5 oz
- Fresh Berries - 7.1 oz
- Sponge Cake Base - 8.1 oz
Step by Step guide
Step 1
Line a 20 cm baking dish with parchment paper. Break the cookies into pieces. Arrange them in the dish so that the bottom is completely covered. Brush the cookies with amaretto (using a pastry brush, 2 tablespoons), and let sit for 10 minutes. Then press the cookies down firmly with your hands.
Step 2
Whisk the egg yolks with the powdered sugar, then add the remaining liqueur.
Step 3
In a separate bowl, whip the cream to stiff peaks.
Step 4
Fold the whipped yolks into the whipped cream.
Step 5
Transfer the mixture to the dish, cover with plastic wrap, and place in the freezer overnight.
Step 6
For the sauce, pour the water into a saucepan, add the sugar, and cook over medium heat.
Step 7
When the sugar dissolves, add the berries and cook over low heat for 5 minutes.
Step 8
Cool the sauce and use it before serving the parfait.
